I asked my wife for her opinion on what in the world the
name of this recipe was, because it looked like “Veal Bird” to me. She studied
it and came up with the idea that it could be the name of the person the recipe
came from, which made sense to me, although “Veal” seemed like a pretty strange
first name to both of us. I was just going to label the recipe “Tenderloins”
until I decided at the last minute to do a quick internet search of Veal Bird.
Guess what…that really is the name of this recipe.
