Cranberry Salad

 

 

Either someone enjoyed collecting variations of Jell-O salad recipes or this family just really loved eating the stuff. Truth in labeling would demand that this recipe should be named something like “Apple Celery Cranberry Lemon Jell-O Salad” but that is a little unwieldy, so we’ll just stick with Cranberry Salad. 

Two Salads

 

The cranberry salad gives instructions for preparing it with either whole or chopped berries. As for the apple salad if you have ever boiled them you know how hard it would be to accomplish this recipe without destroying the cored apples. Also, I have come to understand that if a recipe from this era has salad in the title you can almost bet there will be cottage cheese involved.

My first post about this recipe was from the view that maybe the person who wrote it was going senile because of the inclusion of celery. I had never heard of, or even thought about celery in Jell-O. When I told my wife about it she gave me a strange look like she had no idea why I was snickering. When I pointed out the celery she rather sternly informed me that it’s a normal and rather common ingredient in Jell-O salads.

So, I stand corrected. If you enjoy celery in your Jell-O this recipe looks like a keeper!
