Lemon Ice Box Cake

 

This lemon and pineapple cake would make for a nice cool treat on a hot summer day. The crushed graham cracker crust would give it a slightly crunchy texture and add another dimension to the flavor. On the back we find the paper was originally used as a church ballot.
